Kidney Bean Recipe
Uruguayan Bean Salad
ingredients
3 cups kidney beans, canned, rinsed and drained |
1 medium tomato, chopped |
1/4 cup parsley, chopped |

Dressing
3 tbsp red wine vinegar |
2 tbsp olive oil |
1 tsp dried oregano |
1/2 tsp crushed red pepper (optional) |
1/2 tsp pepper |
Dash of salt |
Directions
In medium size serving bowl, combine first 3 ingredients. Whisk salad dressing ingredients. Add dressing to salad and toss gently. Refrigerate until ready to serve. (To enhance flavor, prepare this salad a day ahead.) Serves 9
