INgredients
| 1/4 cup packed Italian parsley leaves |
| 2 cloves garlic, peeled |
| 2 cans (15 oz.) dark red kidney beans, rinsed and drained |
| 1/2 tsp. salt |
| 1/2 tsp. ground black pepper |
| 3/4 cup Arrabbiata sauce |
| 2 tbsp. extra virgin olive oil |
| Crackers, Crostini, or French or Italian bread |
Directions
Combine sparsely and garlic in food processor; process for 30 seconds. Add beans, salt and pepper, process for 1 minute. Scrape down sides of bowl; process for 30 more seconds. With processor running, add sauce and oil, Process for 30 more seconds or until smooth.
I've modified the recipe so it has more of a smoky pepper flavor by using fire roasted tomatoes and a small amount of chipotle peppers in adobe sauce in place of the Italian flavored arrabbiata sauce.
