Bean Crackers


1 cup kidney bean puree
2 tbsp salad oil
1 tsp baking powder
1 cup flour
1 egg


1 - 15 oz. can dark red kidney beans, drained but reserving 3 tbsp liquid. Put beans and reserved liquid in blender or food processor. Blend/process until smooth.


Combine as for pie crust. Roll out to 1/8 inch thickness on a floured surface. Score into 1-1/2 inch squares. Bake on a cookie sheet at 425 degrees for 15 minutes until golden. Cool and break apart at scored lines.

Options: Sprinkle with garlic salt or cinnamon sugar before baking.
