Fire Island Chili
ingredients
| 2 tsp ground cumin |
| 2 tsp chili powder |
| 1 tsp salt |
| 1/4 tsp cinnamon |
| 1 lb boneless, skinless chicken breasts cut into 1" chunks |
| 1 tbsp vegetable oil |
| 1 large onion, chopped |
| 4 cloves garlic, minced |
| 1 - 15 oz can dark red kidney beans |
| 1 - 14.5 oz cans Mexican style diced tomatoes, undrained |
| 4 tbsp adobo sauce from chipotle peppers |
| 1 cup golden raisins |
| 1 - 6 oz can pineapple tidbits with juice |
| 1-2 cups pineapple juice |
Directions
Combine cumin, chili powder, salt and cinnamon. Coat chicken with seasonings.
Heat oil in a large saucepan over medium heat. Add onion and cook 5 minutes, stirring occasionally. Add chicken and garlic, cook 3 minutes, stirring occasionally. Stir in the final six ingredients. Bring to a simmer, cover and simmer 20 minutes or longer for flavors to blend.
