Chippewa Chili

ingredients

1 lb hamburger or ground turkey
1 large onion, finely chopped
1 clove garlic, minced
4 cups beef broth or stock
2 cups tomato juice or V8
1 - 15 oz can chopped or diced tomatoes
3 - 15 oz cans dark red kidney beans, rinsed and drained
2 cups frozen corn kernels
1 - 4 oz can chopped or diced green chili peppers
 1 large carrot, chopped
2 tsp chili powder (or more, to taste)
2 tsp sugar
1/2 - 3/4 tsp ground cumin
1/4 tsp black pepper
1/3 cup white rice, uncooked
Salt to taste

Directions

In a large pot, combine ground meat, onion & garlic
Cook over medium heat, stiffing frequently to break meat up while browning.
Drain the fat from the meat (optional).
Combine the cooked meat mixture with all of the ingredients expect the rice.  Bring the soup to a boil and simmer for an hour.  Bring the soup back to a boil and put rice in, simmer until rice is done.  Adjust seasonings to taste.
This is another great recipe for a crockpot – After the meat is cooked, put all of the ingredients in for 4-6 hours and let simmer.  If you are a fussy rice person, you could use minute rice and add it closer to the end of the cooking time and it won’t be mushy.
