Scuba Steve's Chicken Bacon Ranch Chili

ingredients

2 tbsp olive oil

2 onions, chopped

4 cloves garlic, minced

4 cooked boneless chicken breasts, chopped

2 - 14.5 oz can chicken broth

2 - 4oz cans chopped creen chiles

2 packages dry ranch seasoning

1 - 12oz can beer

1 lb bacon, cooked and chopped

2 tsp ground cumin

2 tsp dried oregano

1 tsp cayenne pepper

2 - 14.5 oz cans Great Northern Beans, undrained

3 - 15 oz cans dark red kidney beans

Monterey Jack cheese to sprinkle on top

Directions

Heat the oil in a large pot over medium heat. Add the onions and garlic and sautee for 10 minutes or until onions are tender. Add the chicken, chicken broth, bacon, green chile peppers, cumin, oregano, cayenne, pepper and ranch seasoning and bring to a boil. Reduce heat to low and add the beans. Simmer 20-30 minutes, or until heated thoroughly. Pour into individual bowls and top with cheese.
