Rhubarb & Kidney Bean Pudding Bread with Hard Rum Sauce
ingredients
| 1 1/2 cups brown sugar |
| 2/3 cup salad oil |
| 1 egg |
| 1 cup buttermilk |
| 1 tsp salt |
| 1 tsp baking soda |
| 1 tsp vanilla |
| 2 1/2 cups flour |
| 1 1/2 cup diced rhubarb |
| 1 1/2 cup kidney beans |
| 1/2 cup walnuts, chopped |
| 1/2 cup sugar |
| 2 tbsp butter |
| 1/2 tsp cinnamon |
Directions
Mix first 10 ingredients together. Divide into 2 greased loaf pans. Bake at 350 degrees for 1 hour; let cool.
Hard Rum sauce: 1/2 cup butter, 1 cup powdered sugar, 3 Tbsp rum. Whip butter and sugar until light and fluffy, stir in rum. Serve over warm pudding bread.
