Mock Hamburgers
ingredients
| 2 cans dark red kidney beans, rinsed and drained |
| 3/4 cup Italian seasoned dry breadcrumbs |
| 2 eggs |
| 1/4 cup finely diced onion |
| 2 tbsp ketchup |
| 1 tbsp Worcestershire sauce |
| 1/4 tsp garlic powder |
| 1/4 tsp pepper |
| 2 tbsp oil |
| Lettuce and tomato, as desired for burger toppings |
Directions
Mash 2 cans (19 oz. each) rinsed and drained dark red kidney beans. Stir in 3/4 cup Italian-seasoned dry breadcrumbs, 2 eggs, 1/4 cup finely diced onion, 2 Tbs. ketchup, 1 Tbs. Worcestershire sauce, 1/4 tsp. garlic powder and 1/4 tsp. pepper so everything is mixed together. Shape mixture into 6 (3/4''-thick) patties. Heat 2 Tbs. oil in a large skillet (nonstick is best) over medium heat. Add 3 patties; cook, turning them once, about 5 minutes per side, until browned on both sides and cooked through. Repeat with 2 Tbs. oil and remaining patties. Place patties on buns with lettuce and tomato. Serve with extra ketchup.
