Dark Red Kidney Bean Mediterranean Orzo Salad
|1 lb orzo pasta|
|1/2 cup fresh lemon juice|
|1/2 cup extra virgin olive oil|
|1 tsp oregano|
|1 lb grape tomatoes, cut in half|
|1 large seedless cucumber, quartered lengthwise and cut in 1/2" pieces|
|1 cup pitted Kalamata olives, coarsely chopped|
|1 yellow or orange pepper, chopped|
|1 red onion, chopped|
|2 - 15 oz cans dark red kidney beans, drained and rinsed|
|8 oz feta cheese, crumbled|
|1 1/2 tsp salt|
|1/2 - 3/4 tsp pepper|
Prepare pasta according to package instructions. In a colander, drain cooked pasta, then rinse with cold water and drain well.
In a small bowl, whisk together lemon juice, olive oil and oregano
In a large bowl, combine tomatoes, cucumber, olives, pepper, onion, dark red kidney beans, cheese, and reserved pasta. Add the lemon dressing and toss to coat. Season with salt and pepper.
Can be served either at room temperature or cold.
