Farmer's Market Vegetable Saute
|3 Tbsp butter or olive oil|
|8 oz mushrooms, sliced|
|1 medium zucchini, sliced in half and cut in 1/4" slices|
|1 medium summer squash, cut in half vertically and sliced in 1/4" slices|
|1/2 onion, vertically sliced|
|1 clove garlic, minced|
|2 ears of corn, cut off cob|
|1 - 16 oz. can dark red kidney beans, drained and rinsed|
|1 1/2 tsp Italian seasoning|
|1 tsp salt|
|1/2 tsp freshly ground pepper|
|1/4 cup Eau Galle Italian or grated Parmesan cheese|
After vertically slicing onion, sauté in butter or olive oil and garlic for 4 minutes, add sliced mushrooms and cook to desired tenderness. Add remainder of ingredients, except for cheese and adjust seasonings.
Place in casserole dish, top with cheese and bake uncovered at 350 degrees for 30 minutes.
