Rocky Road Oatmeal, Chocolate Chip and Craisin Cookies

ingredients

1 cupbutter, softened

1 - 15 oz can dark red kidney beans, drained, rinsed and pureed

1/2 cup firmly packed brown sugar

1/2 cup white sugar

1 1/2 tsp vanilla

1 tbsp hot coffee

1 3/4 cup flour

1 tsp baking soda

2 1/2 cups quick cooking oatmeal

1 1/2 cups chocolate chips

1 1/2 cups craisins

Directions

Preheat oven to 350 degrees. Cover cookie sheet with parchment paper. In a large bowl beat butter and sugar till creamy. Add pureed beans and vanilla and beat until fluffy. Add dry ingredients and stir in oatmeal, chocolate chips, and craisins. Batter will be thick. Drop by tablespoons and flatten on cookie sheet. Bake 12 to 15 minutes until edges are brown, center of cookies should be soft. Cool on pan for 2 minutes and finish cooling on rack.
